Discussed pizza holding procedures and TPHC, pizza is held no longer than 1.5-hours in a heated cabinet. Prep cooler cold holding temps adequate. Thermometers installed throughout. Discussed installing additional shelves or cubbies for employee personal items. Equipment was found to be adequately maintained. All cleaning chemicals found stored and labeled properly. Hood and vents were professionally cleaned 2/12/18.

Discussed replacement of ceiling tiles in rear storage area near stairwell.
