Comments: The Copper Turret, inspection conducted Tuesday during lunch. Toured and discussed the daily routine and procedures with Chef Mike Malpeezi. Hot holding at the cook line observed adequate: 166-173F. Cold holding prep unit(3) items at the cookline, observed at proper temps., 40-45F. Turkey Breast cook temp observed, out of the smoker; 173F. Discussed cleaning schedule of cookline equipment and deep cleaning items. Hair restraints and hand barriers utilized. Toured and discussed brewery operations and sanitation routine with Brew Master Mike Coons. High temp Mechanical dishwasher working as per manufacturer's spec, discussed service technician schedule. 90% of kitchen staff is ServSafe Certified.

Comments: Much improved food service operation. Hot holding temperature of soup, pulled pork, beef and mashed potatoes observed at temperatures ranging from 141-185 degrees Fahrenheit. Cold holding temperature of sliced tomatoes, chopped lettuce and multiple additional food items observed at temperatures ranging from 39-44 degrees Fahrenheit. Hand barriers utilized as required. Equipment clean and well maintained. Discussed that written documentation is required in regards to "vacmaster" equipment; specific use of said equipment requires documentation. Facility has obtained a new high temperature commercial dishwasher; installed and operated in accordance with manufacturer instructions. Brewery clean and well maintained.

Comments: Drawer style refrigeration unit has been repaired and was observed operating at a temperature of 37 degrees Fahrenheit. Downstairs chest freezer with broken lid has been replaced. Dishwasher operated in accordance with manufacturer instructions; dishwasher temperature observed at 137 degrees Fahrenheit and chemical sanitizer detected. Chemical test strips for use with dishwasher have been purchased. Ventilation hood filters have been cleaned and the ventilation hood will be professionally cleaned at close of the Spring semester. Discussed maintenance of floor below kegs in walk-in refrigerator and floor below dishwasher in addition to removal of dust on fire suppression equipment. Discussed sealing wood in bar walk-in refrigerator where beer tap lines are attached. Discussed vacuum packaging of food product; reduced oxygen packaging (ROP) requires prior health department approval; written plan requirements provided at time of inspection.

Discussed maintenance of bar walk-in refrigerator floor following construction; floor shall be cleaned, sealed, etc. Facility to purchase new steam table and pantry refrigerator. Prosciutto ham located in walk-in refrigerator is for educational purposes and not served at facility.

Chest freezers have been relocated in basement area and are no longer stored below unprotected waste water lines. Light bulbs have been shielded in basement storage area.
