Hot holding items observed at adequate temps; spaghetti sauce, meatballs and sausage 152-170F. Strombolis, 140-160F. Cold holding adequate; pizza prep items 36-44F. "Meat -delight" pizza cook temp observed, 203F. Thermo-pen thermometers utilized. New door gaskets have been installed on the pizza prep cooler unit. Discussed the cleaning schedule of the shelving units. Hood and vents were recently cleaned. Hair restraints and hand barriers used/worn throughout. Discussed w/ HMS Host manager, their corporate compliance inspections conducted by NSF.
