A new walk-in cooler was installed to replace the former one. A new computer system utilized by Little Caesars uses a barcoded sticker system that ensures all cooked products are held for no more than one half-hour. Thermometers are installed throughout. The ceiling above the pizza oven has been repaired. Pepperoni and sausage pizza cook temp observed: 203F. Cold holding pizza prep cooler items adequate: 33-40F. Hot holding chicken wings found at 171F. Discussed the requirement to submit a "Notice Of Intent" prior to construction or installation of new equipment or other changes to the facility.
