According to manager, Tony Shi, all chicken in hot box was completely cooked in oven 45 minutes ago and placed into hot box. Corrected- chicken moved to oven and reheated to 165 F. Hot box adjusted with ambient temperature of 196 F obtained. 2E- Facility without a probe thermometer to evalute cooking, cooling, reheating ad holding temperatures of time/temperature controlled for safely foods. Corrected- Stem thermometer obtained during inspection. |
