Regarding Blue Item #11 D- Storage racks inside of walk-in cooler were clean; Blue Item # 15 B- Kitchen hood filters above flattop grill were acceptable at time of inspection- Corrected. Will conduct a HACCP training with kitchen staff later in year.

Comments: A Time Table of Compliance Date of May 5, 2018 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance. Checked UV disinfection equipment during inspection- meter reading 91% and was operational. Water sample was not taken during inspection. Hot potentially hazardous (TCS) foods were maintained on steam table above 140 dF, digital thermometers are available to monitor cooked phf's. Monitoring thermometers available inside refrigerated equipment used to store cold phf's. Employees were observed using thermometers, also properly using plastic gloves and utensils. Discussed changing of gloves when dirty and routine hand washing with staff during inspection.

Discussed routine calibration of numerical thermometers used to checked hot potentially hazardous (TCS) foods with Cook during inspection. Sanitizer test kits available for checking dish machine. Discussed routine hand washing and proper use of gloves during inspection( Cook was using plastic gloves properly during inspection). A Time Table of Compliance Date of June 20, 2017 has been established to correct the remaining violations listed above. A re-inspection will be conducted after this date to determine compliance.

Observed test strips for quat sanitizer and bleach sanitizer and probe thermometer at time of inspection. Discussed with operator storing home fries in shallow pan for cooling. Discussed replacement of cracked and chipped lids and containers. UV reading 68 at time of inspection.

TTOC of 12/1/14 was set for remaining violations: 15a (cove molding lacking on cook line near cold-holding units and drop ceiling tiles lacking near 3-bay sink) and 8a (food stored on floor in walk-in ice cream freezer). Discussed options with operator.
