Chowder on stove top: 197F, cooked onions in fry pan on counter 110F, chef states these were just cooked, placed into cooler. Walk in cooler: raw chicken 36F, 5 gal. bucket clear broth 41F, mashed potatoes 37F, mashed potatoes in 18x24x2 inch pan uncovered and cooling 128F, chef states these were just placed into the cooler and prepared at noon, temperature checked 10 minutes later - 121F. Kitchen bain marie on left side: top - sliced tomatoes 37F, bottom - cooked chicken 44F. Bain marie on right side: top -cooked chicken 40F, bottom - cooked pasta 40F. Hot hold: tomato soup 158F, brown gravy 158F. Item that was to be completed before opening and not yet completed at time of inspection: Old fire extinguisher is at the front door, new extinguisher was observed ready to intall at front door. Install new extinguisher. |
