Comments: No violations noted at time of inspection. Pepsi display cooler thermometer 40 degrees. Prep table cooler thermometer 32 degrees; potato salad temped at 38 degrees. Reach in thermometers 37-40 degrees. Sausage 42 degrees on cold holding left bay. Hash temped at 72 degrees; gravy temped at 50 degrees in right cold holding bay. Had been at inadequate temperature for less than 2 hours. Corrected at time of inspection by employee who put foods into smaller containers and raised level of ice in cold holding bay. Discussed proper way to maintain these temperatures. Violations from previous inspection have been addressed by owner. Please mail report.

Comments: Discussed deficiencies with the operator. The hot holding temperatures of those food items measured were all above 140 degrees F. The cold holding temperatures were below 45 degrees F, except where noted. The Fire Suppression System on the Ventilation Hood was inspected in December 2015 and there was a chlorine residual of 50 ppm in the Mechanical Dish Washer rinse water.

Comments: Discussed deficiency with the operator. Sliced Tomatoes, Macaroni Salad, Potato Salad, Sliced Turkey, and Sliced Corned Beef were all measured to be between 41 to 45 degrees F in the Upper Compartment of the Bain Marie. A large container of Potato Salad in the Two Door Reach-In Cooler was measured to be 41.1 degrees F. The owner said that they are preparing their Potato and Macaroni Salad from all pre-chilled ingredients. Report e-mailed.
