Comments: Observed log for waiver from hot hot has lapsed and discussed with manager Facility is clean and appropriate, but lacks hand wash and vegetable wash sinks within kitchen. Hand wash station at counter observed. Determined and discussed dedicated wash basin (first bay) for three bay sink will also serve as kitchen hand wash and middle bay of three bay for use as food wash sink provided strainer (or like) in use to assure food does not contact sink. Walk in cooler had ambient built in digital thermometer indicating 59 degrees. Probe for this unit relocated away from interior lamp to later observe 40 degrees ambient with deli ham 40 degrees and cooked , breaded, chicken cubes 40 degrees within Counter crock pot hot hold 178 degrees marinara sauce kitchen prep bain marie cooked chicken wings (below) 43 degrees and chopped garlic in oil (above) 41 degrees
