Comments: No violations observed as facilty is clean and properly organized including : 150 ppm quaternary sanitizer confirmed with facilty provided test kit current and accurate temperature logs defrosting within refrigeration and practice of freezing ice on food tray for wrapped sandwiches within reach in cooler on service line healthy staff today Discussed sanitizer use including air drying/contact time sick food worker policy hand contact 4 hour waiver from hot hold. This is not an option currently without a written plan and approval by this Department.
