Comments: Facility is currently cleaning out the cooler. Almost all food has been removed and is stored on counters and racks at least 6 inches above the floor. All food measured at 45 F and below. Operator appears to be putting items back into cooler in a timely manner. Discussed appropriate cooling and shallowing pan use with operator. Discussed TPHC and ROP waivers with operator. All temperatures measured adequate.

Comments: The purpose of this re-inspection was to evaluate if the above facility is using proper barriers when handling all ready to eat food items. The use of proper barriers was reviewed with the owner and head chef at the time of inspection. Discussed proper cooling from 120F to 70 F within 2 hours, then from 70F to 45F or below within an additional 4 hours. Reviewed proper hot holding above 140F and proper cold holding at or below 45F. Due to the above red violation the Department may take an Enforcement Action against the facility.

Comments: The purpose of this visit was to re-inspect the facility for items noted on the May 5, 2016 and May 6, 2016 reports. At the time of this visit the following documentation was provided to the operator and reviewed: CDC handouts for Norovirus: Overview, Symptoms, Preventing Infection, Transmission, For Food Handlers and Disinfect.org sheets. Forms provided from the NYS Department of Health include : a complete food service handout packet with Supervisors Guied, Food worker Policy, Complaints, Bare hand contact, hand washing, and maintenance to prevent future issues. The Facility allowed the Department to interview workers 1C, 2C and 3C at the time of the visit. The Facility was reminded of the information on cleaning and prevention from the previous visits. The facility is expected to be in compliance with 14-1 of the State Sanitary Code. Due to the red violation noted during the start of the inspection, the Department may Take an Enforcement Action against the facility.
