Item 15A: Floors, walls, ceilings, not smooth, properly constructed, in disrepair, dirty surfaces Comments: Hair restraints and hand barriers ok, all handwash stations ok, cl bleach sanitizer at 3bay and wipe buckets ok. Ceiling tile still missing above rear handwash station and still need cpr kit/info displayed in dining room. Therefore all non critical violations except 15A and 16 were corrected. Note, two containers of pizza tomato sauce after mixing supplier pizza sauce and spice packet together, were found out on prep counter at 230pm and temped with inspector's calibrated and digital thermapen and found to be 67dF for open container and 64dF for the unopened and full container. Manager explained Marco's procedure and handed inspector paperwork from Ohio Department of Agriculture explaining the microbiological safety of pizza sauce and time duration for holding at ambient air temp 12-24 hrs. with no significant microbiological growth increase over the experimental 24hr. period. This needs further review under NYS and Niagara County and a critical violation pertaining to potentially hazardous food and time/temp control will not be written at this time. |
