Comments: 1- Sushi rice waiver adherence verified at inspection. 2- Personal food from kitchen must be consumed, by all personnel, in a reserved area, not in kitchen. 3- Verify that drain from ice bin at soda station in kitchen, adjacent to dishwasher area, has indirect drain. 4- Recommend labeling coolers to ensure employees know to alert managerial staff if cooler ambient temperature exceeds 45°F (recommend setting coolers at 41° or less). 5- Recommend labeling basement ice machine water filter with date of replacement. 6- Recommend test kit for wiping cloth sanitizer and bar sink sanitizer kept at bar, in addition to just the sushi bar and kitchen. 7- All violations must corrected as soon as practical. Will be pursuing Time as a Public Health Control as alternative. 2- Ensure flip-top coolers remain closed when not actively being used to ensure proper temperature is maintained. 3- Ensure all staff are trained in procedures in-place at facility. 4- All violations must be corrected in a timely manner, and the proof of correction transmitted to the Glens Falls District Office. Uncorrected violations and repeat violations may result in the initiation of enforcement action and the imposition of fines.
