Observed five, 10 to 15 pound pieces of what the owner said were Air-Cured Beef hanging in the Reach-In Cooler in the Kitchen. I asked the owner about Air-Cured Beef and he said that the raw beef is saturated with salt and the salt allowed to penetrate into the raw beef for about a week. The beef is soaked in water, which is frequently changed, in order to remove most of the salt. A spice mixture is used to coat the outside surface and the beef pieces are allowed to "air cure" for two or three weeks. The owner said that these cured beef pieces were only for personal use by his family. Report e-mailed. |
