Comments: St. Mark’s only food events are coffee hours using store bought donuts and desserts and baked items (cookies, brownies) prepared in the kitchen for public events, and using single-serve dishes. Commercial heat-sanitizing dishwasher is currently broken and they would use the three bay sink for sanitizing any reusable dishes. Maximum capacity has been recalculated as 81 persons.

Comments: Refrigeration temperature was 42 degrees. Whipped cream temperature 45 degrees. Hulled strawberries 60 degrees, just placed in refrigerator. Coffee creamer 42 degrees. Education was given on how to safely produce home processed jams and the process of obtaining certification for this type of food production. Education was also provided on the proper setup and monitoring of a buffet.

Comments: As we discussed, the food prep sink will be changed to the bay at the far left with an indirect, one inch air gap installed since the current one spills over / fills up from the garbage disposable. If you obtain a quaternary ammonia (QAC) sanitizer as discussed as another option to using bleach water solution, then you will need to obtain QAC test strips to test the strength of that sanitizer solution. The acceptable range for sanitizer is 50-200 ppm. Recommend labeling, identifying the sinks. Thank you.
