Comments: The thermometers were calibrated on site and found to be accurate. Three bay dishwashing was discussed. the dishwasher was sanitizing at the time of inspection. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection.

Comments: A re inspection of the facility was performed to verify the dishwasher and refrigeration was working properly. A new dishwasher has been installed and sanitizer was at 50 ppm and the refrigerator for pizza toppings was serviced and operating at 38-42 degrees F. Cooling of chicken wings was discussed. They must be cooled uncovered on a shallow sheet pan in the walkin after using an ice water bath.
