Discussed proper cooling-operator states cools fried chicken on shallow pans and transfers to larger bucket when cooled. Discussed storing fried chicken pieces in cooler in between servings to customers. Upon arrival chicken cooked was stored out of refrigeration and out on cabinet however still in temperature. Staff state just made an order and had it out of cooler for service. Education provided. All cold held temperatures ok. Discussed fish tank equipment and shelves. Must keep all fish tank equipment and handling of this fish related apparatus separated and out of kitchen. Be sure proper hand washing being done after handling.
