Comments: operator is in the processes of installing a walkin freezer in the kitchen and has begun the gutting process for the walkin cooler that will be installed behind the bar. operator discussed installing a system that could possible draw air in from out side during the winter months. I told him I would. have to check into it to see if it's ok. operator wants to extend the dinning area outside and make it useable for cooking on the grill. mentioned that we would require a handwash station and for things to be cleanable. he mentioned placing a cooler outside and I informed him it would need to be inaccessible to all people other than employees. a mop sink has been installed a do discussed installation of the walkin cooler and how it must be smooth and cleanable walls as well as we would like to see the specs of the unit. operator intends to improve dry storage area and after discussing the air gap on his prep sink I said I would be ok with him reducing the gap between the funnel and the pipe as it is causing splatter when running the water.
