Comments: Discussed the deficiencies with the operator. Engaged in a brief conversation about the advantages of using stainless steel containers instead of plastic containers for cold holding. The owner needs to submit a description of their process for holding pizza slices using time as a control in place of cold holding. The final rinse on the mechanical dish washer had a chlorine residual of 50 to 100 ppm and cold holding temperatures were 45 degrees F or less except where noted. Hot holding temperatures were measured to be between 154 and 183 degrees F. Report e-mailed.

Comments: The pizza on display is not properly tracked for disposal. Pizza can be on display a maximum of 2 hours unless it is plain cheese or pepperoni, which can be held 4 hours. The bucket of sanitizer was much too strong. It tested in excess of 200 ppm. Meats were found on counter and in sink for unknown purpose. Products should be kept in cooler until ready to be prepped to maintain proper temperatures. Facility in need of thorough cleaning.
