Observed bags of pulled pork and chicken in chest cooler being hot held at temperature of 140 and 142dF. Pulled pork was cooked at facility and brought to event warm. Recommended hot holding bags of pulled pork on grill. Observed hot dogs being hot held on grill at temperature of 189dF. Observed temporary hand wash station. Observed food being cold held in cooler truck at temperature of 43dF. Observed staff washing hands and wearing gloves and using utensils during service.

Observed facility preparing food (shrimp and beef) in small quantities to maintain temperature of 45dF or less. Observed facility cooling rice on sheet trays on speed rack in walk-in cooler to meet cooling schedule of 140-70dF in 2 hours and 70 to 45dF in an additional 4 hours. Observed digital thermometer. Observed beef roasts in alto-shaam with internal temperature of 130dF. Observed staff wearing gloves while washing ready to eat salad. Reviewed hand washing and ill food worker policy with manager. Observed sanitizer (Quaternary Ammonia) at 300ppm in 3 bay sink and 200ppm in wiping cloth bucket. Offered food service training for staff to manager.

Comments: Discussed procedures for cooling cooked potentially hazardous (TCS) foods with Manager during inspection. Salads are made daily, also salad dressings made on-site, were labeled and stored in walk-in cooler. Staff were observed working properly with equipment and using plastic gloves during inspection. Also discussed routine hand washing and calibration of numerical thermometers used to evaluate cooked potentially hazardous (TCS) foods with Manager. A Time Table of Compliance Date of February 18, 2016 has been established to correct violations listed above. A re-inspection will be conducted after this date to determine compliance.
