CCHD to remove waiver from permit thus all hot potentially hazardous foods are to be maintained at 140F or greater. Observed general tso chicken cooling in walk-in cooler at a depth less than 4 inches without a lid meeting cooling schedule of 120-70F in 2 hours, then 70-45F in an additional 4 hours. Operator stated once chicken is cooled, it is combined into a large container for storage in walk-in cooler. Advised staff/operator to remove smaller quantities of time and temperature control for safety/potentially hazardous food (TCS/PHF) from refrigeration during preparation. Observed at start of inspection that staff had pulled two large bus pans of egg roll mixture including pork and shrimp for wrapping egg rolls all at a temperature of 44F or less. Based on time staff were taking to wrap egg rolls, quantity was too large. Staff placed large bus pans back into refrigeration and each pulled on 1/2 pan of mixture to work with at a time. |

Comments: Conducted complaint investigation- observed staff placing noodles, cabbage and carrots into individual serving containers with bare hand. Staff reheated one serving in wok and lo-mein reheated to temperature of 187dF. Discussed that if individual serving sizes of food is not being reheated to a minimum of 165dF prior to service than staff is to wear gloves while handling food. Discussed the requirement to wash hands when staff enters kitchen, after contamination (eating, coughing, touching face, etc) and between glove changes. Observed soap, running hot water and paper towels at hand wash sink. The following items have been corrected from previous visit- 10B) Door gasket on walk-in freezer replaced. 11A) Facility has obtained chlorine sanitizer test strips. 11D) Shelving in walk-in cooler clean. 12C) Condensate line in walk-in freezer connected into plumbing. 15A) Walls of walk-in cooler have been cleaned. | ||
