Operator was not actively preparing food at time of inspection. Operator states she has and uses probe thermometer. Temperature of 2-door stand up cooler in kitchen adequate. Operator education given with regard to proper hot and cold holding temperatures. Operator will use probe thermometer to actively temp foods for proper cooking, cooling, hot holding, and cold holding; including but not limited to prior to service at events. Ansul system last inspected April 2018. At time of inspection, approximately 6 pounds of cole slaw and 2 pounds of potato salad which was said to be left over from last night (Tuesday night) Senior Citizen public meal found to be stored in refrigerator in unlabeled plastic ziploc bags. Food was said to be waste food; held for a citizen to pick up for animal feeding. All listed food was discarded at time of inspection. Operator will provide menu to this office asap. |
