Comments: The temperature of Tuna Salad and Chicken Salad in the Salad Bain Marie were 41.5 and 42.4 degrees F respectively. Meat Sauce heating on the stove was 204.5 degrees F, Meatballs in this sauce were 191.4 degrees F, and South West Chicken Soup was 187.6 degrees F. The critical issues observed on the last inspection were now corrected. Strongly encouraged the operator to use their probe thermometer to periodically monitor the temperature of both hot and cold held items.

Comments: Discussed deficiencies with the operator. Took the following temperatures of items placed in the Reach_In Cooler: Vegetable Soup - 70.0 degrees F @ 11:17 AM and Pasta Salad - 48.8 @ 11:20 AM. Strongly suggested to the operator that they uncover any food items that they are cooling until the temperature of these food items is measured to be 45 degrees F or less. We also discussed stacking Temperature Sensitive Food no higher than the ridge on the inside surface of the containers in the Bain Marie. The following food temperatures were recorded in the Upper Compartment of the following units (degrees F): Salad Bain Marie - Sliced Tomatoes - 40.5 and Tuna Salad - 37.5; Sandwich Bain Marie - Sliced Ham - 46.6.
