Noticed that plastic containers are used to store cold-held items on the sandwich and salad bar lines. These containers are difficult to immerse completely into the ice baths and the thermoplastic material is a poor conductor of cold/heat. This also impeds the ability of the ice bath to effectively cool the TTCS food item and maintain the temperature at 45 degrees F or less. Stainless Steel containers would be more effective in this regard and are recommended for this use. The following temperatures were measured (degrees F): Two 3 pound portions of Pot Roast in the Walk-In Cooler - 45.3, 45.6 and Sliced Tomatoes - 39.4; Sliced Tomatoes on the Sandwich Line - 51.7 (will be discarded before two hours have elapsed), and Diced Eggs on the Salad Bar - 38.7.
