Kitchen manger/cook (Patty) stated that she will allow them to cool briefly (until able to handle) and then will cut and debone the meat – ok. // Discussed cooking and cooling procedures – ok (proper procedures observed to be implemented. No foods observed to be hot-held or in service during inspection. // Patty questioned requirements for storing food during service along a service counter line (to be served cafeteria style as opposed to family style). Discussed that if food must be properly hot or cold-held while on service line (using heating or cooling equipment) to hold at a minimum of 140F (for hot-holding) or a maximum of 45F (for cold-holding). Also discussed that food must be protected (ie: sneeze guard) and served by kitchen staff using barriers (gloves, utensils). If food is self-served, then it must be discarded and cannot be reserved for later use. // Reach-in and walk-in coolers properly equipped with unit thermometers and maintained at 36F to 38F. Product thermometer readily available and used. Hand-wash stations properly maintained. Mechanical dishwasher properly maintained (high temperature sanitize, reaches 190F during final rinse). // Kitchen observed to be very clean and well maintained. // Chlorine residual measured to be 0.4 ppm from kitchen two-basin sink.
