Comments: No violations observed during the inspection. 1) Some items found on the service line at approximately 125 degrees F (French Toast Sticks, Chicken Patty Sandwiches). Products were cooked to above 140 degrees F just before service and held hot on the steam table. Entire service window is less than 2 hours. A formal waiver will be issued allowing "Time as a Public Health Control" for these and similar products so that they may be held at these temps for up to 4 hours time on the service line. 2) Discussed cooling methods with operators. Recommend switching to 2 inch pans from 4 inch pans in order to facilitate more rapid cooling of thicker products. 3) Discussed grease trap for the kitchen with the operator. It is unclear if one is present or not. Will follow up with school maintenance and City Code Enforcement office if necessary. | ||
