Proper cooling was observed, temped and discussed. Discussed proper makeshift cold holding. The low temperature mechanical dishwasher is operating perfectly per Manufacturers Instructions. All citations from the 5/23/16 inspection have been corrected, thank you. Good operation.

The dispenser hoses are currently placed in the left side and right side bays. In discussion with staff, the 3 bay sink is used as a food prep sink. Please label the middle bay "Food Prep" and train staff to only perform food prep in the middle sink bay. Also, please ensure that the dispenser hoses are NEVER placed in the middle bay to avoid potential cross contamination. Must correct all violations no later than 12/15/15, except kitchen floor and dishwash room baseboard coving must be completed no later than March 31, 2016.
