Strongly encouraged the operator to store potentially hazardous foods in stainless steel containers especially when cold holding and cooling these items. The temperatures of food in the coolers was measured to be less than 45 degrees F and the chlorine residual on the mechanical dish washer was measured to be about 100 ppm.
