Comments: Discussed deficiencies with the owner. The operator in the bar-b-que pit building had a probe thermometer immediately available for use and chicken halves cooking on the grates were measured to be between 172 to 200 degrees F. Roast beef was measured to be between 125 to 130 degrees F in the auto sham (rare) and pork butts were between 140 to 145 degrees F. Chicken halves were measured to be at 175 to 191 degrees F and pork spare ribs were measured to be between 150 to 157 degrees F. Cold held items in the Walk-In Cooler and Bain Marie units were measured to be at 41 degrees F or lower. Cooks were using gloves to handle ready-to-serve foods and changing gloves frequently in between uses. Report e-mailed.
