A discussion was had with the owner and head chef, and it's agreed that more time will be extended to complete the rest of the painting, repair and cleaning on a timetable of the next couple of months. Pre cooked and cooled chicken wings in the Glenco and rear walk-in cooler are all 45 degrees F or below, Good. Three hot held soup temperatures measured are 140 degrees F or above, Good. Glove use was observed, proper chemical test strips are available for quaternary ammonia & chlorine. Proper cooling observed. Regarding all violations cited:: A compliance date of April 30, 2015 is being set for correction. If this date or before is not met then enforcement action will be taken on any violation that is not corrected. At least one thermocouple food probe thermometer should be obtained for this high volume operation for fast & accurate measurement of internal hot and cold food temperature monitoring and for easier monitoring during cooling of potentially hazardous foods.
