Comments: Spoke to Operator (Dain Reese) during inspection who stated that he was in the process of applying for a grant through the City of Elmira to re-model kitchen area. If approved, construction may occur in near future and that the kitchen will need to be closed during construction. Told Operator to contact HD if grant is approved and provide date of proposed construction project. Health Dept. to conduct a pre-operational inspection of remodeled kitchen prior to reopening for operation. A Time Table of Compliance Date of June 15, 2018 has been established to correct violations listed above(pending possible kitchen re-model dates). A re-inspection will be conducted after this date to verify compliance. Employees were observed properly using plastic gloves and utensils during inspection. Numerical thermometers available for evaluating cooked potentially hazardous foods.

Employee stated owner still contemplating installation of walk-in refrigerator in rear storage room.

Comments: Reinspection conducted to check status of items observed during inspection of 3/1/2016. All above listed violations were also cited during 3/1 inspection, however, the following were corrected: 11D-interior of ice machine has been cleaned; 14B-exterior door closed-movable screen door installed; 12E-middle bay in kitchen 3-bay sink empty and available for hand washing; 15A-floor at bar has been cleaned. Per manager, owner stated via phone at time of reinspection that all violations observed above will be fixed in two weeks. Sandwich make unit operating such that temperatures of food items inside are approximately 44-45F. Manager was advised to monitor temperatures of unit several times daily as setting on thermostat was at maximum cold. Manager placed call for service during reinspection.

Advised bar staff to ensure items are washed, cut, and handled while preventing barehand contact. Reinspection(s) to be conducted to verify correction of above violations.
