Comments: Notes: - Re-locate equipment placement from in front of the kitchen hand washing sink to provide full accessibility for hand washing at all times during operation. - Facility found engaging in cook/cool/reheat operations. Discussed proper cooling of sausage gravy product found in the cooling process at 110F. Item placed on ice to rapidly chill product to 70F within adequate time frame. Cooling: Previously cooked potentially hazardous foods requiring refrigeration must be cooled by an adequate method so that every part of the product is reduced from 120F to 70F within 2 hours and from 70F to 45F or below within an additional 4 hours. Foods may be allowed to pre-cool from 140-120F at room temperature so long as the product is identified as being in the pre-cooling phase. - No 3-compartment sink available in the facility. The facility is currently utilizing mechanical dishwashing. Should the mechanical dishwashing system fail; the facility is required to close until the repair is complete. - The front line ice sink and various cold holding equipment condensing units are not plumbed to a sanitary sewer or self-contained with a functional evaporation tray. Facility is required to maintain manual collection at least daily to prevent overflowing. Should the situation pose a sanitary concern; the requirement to plumb to a sanitary sewer or utilization of a functional evaporation tray may be requried. - The facility is currently lacking a utility sink for the safe and sanitary disposal of waste water.
