Comments: No violations observed. This event is very well organized. All soups were in crock pots and temped above 140F. Food workers in the kitchen were assembling sandwiches and wraps and were wearing gloves and hair restraints. Several people were able to tell me about the soup cooling procedures that had taken place after the soups were cooked initially. Other items available included pies, cinnamon buns and other non hazardous baked goods.

Comments: No violations observed. All kitchen staff were wearing gloves and hair restraints upon inspector's arrival. Veggie and hummus wraps are being prepared. All other sandwich fillings are being stored in the refrigerator below 45F. These fillings are all store bought and still sealed in their original containers. These include: Ham Salad, Chicken Salad, Tuna Salad, Seafood Salad and Egg Salad. Store bought mini quiches are being stored in the freezer. An assortment of store bought desserts are stored on the counter in their original packaging. Interview with kitchen workers indicated the following service plans: Sandwiches will be assembled and then stored in the refrigerator until time of service. A limited number of sandwiches will be plated and put out for service for 30min. After 30 min they will be discarded and replaced with a new batch from the refrigerator. Frozen store-bought mini quiches are going to be prepared later according to the package's baking instructions and served immediately. Kitchen staff also reported that one I'll food worker was already sent home before even entering the kitchen. Excellent! Very well organized and planned!
