It was learned that the chicken is never froze, with deliveries received once a week. Orders are portioned by scale, cooked and served. The sauces are made daily, never being used beyond two days. Besides the pizza and chicken wings being served, the facility also serves cold vegetables with dressing. Gloves were present for handling "ready to eat" food. Inspector left Food Safety packet and paper inspection form for cook to reference the back side. Items checked during inspection included the following: accuracy of metal stem food probe thermometer, proper cooking of chicken, availability of handwashing in food prep area, availability of gloves for handling "ready to eat" food, availability of sanitizer for wiping cloths, (also, discussed proper sanitizer concentration), proper sanitizing of food service utensils, proper food storage and general sanitation. Cook was very cooperatve during inspection. |
