Temperature in old-style stainless refrigerator used to store salad dressing not adequate for proper storage and cooling of phf/tcs foods as ambient air temp approximately 46F. Food worker advised to remove cooked potatoes and soup and relocate to other cold holding unit. Sanitarian to email operator copy of HACCP chart for monitoring cooling of turkey breast.
