Item 10B: Non-food contact surfaces and equipment are improperly designed, constructed, installed, maintained (equipment not readily accessible for cleaning, surface not smooth finish) Comments: Observed functioning thermocouple. Egg patties in slotted hot holding unit near service line had a temperature of 157F. Sausage in same unit, a row down had a temperature of 150F. Sliced American cheese had a temperature of 41F in salad cooler near office. Egg patties stored in walk-in cooler had a temperature of 38F. Observed facility properly following cold holding waiver, as all times for white sliced American cheese were labeled with discard times, on dry erase board located near cold holding unit. Observed all staff wearing gloves to handle ready to eat foods, such as breakfast sandwiches. Observed cook wearing blue disposable gloves when working with raw product. Interview with staff indicated that blue gloves are used to identify that they are working with raw product. Advised GM that between changes gloves all staff should wash hands prior to putting on new gloves. Observed bucket filled with wiping cloths stored in sanitizer(chlorine) at 100ppm, per facility's test strips. |
