Comments: No violations observed. Facility is very well run. Approximately 10 employees are serve safe certified including managers, assistant managers and shift supervisors. Facility has Temp Alert sensors installed in all refrigeration units that monitor and report unit temperatures digitally and can be monitored by management via computer or cell phone. Manager also explained cooling proceedures that are performed each night before closing for all hot held food items. A tracking sheet with cooling logs and food worker initials was available and well maintained. | ||

All refrigerated foods are below 45F and refrigerators have accurate thermometers. Food workers are wearing gloves and hair restraints. Metal probe thermometer in kitchen reads 32.4F in an ice bath. Facility is very clean and well organized. Manager reports that they have had no ill food workers in the past few weeks. Reviewed ill food worker policy and bare hand contact policy. |
