Educational materials on proper cooling procedures along with a blank cooling log were given to operator. It is recommended that a cooling log be used to monitoring the cooling process to ensure that internal food temperatures drop from 120 degrees F. to 70 degrees F. in 2 hours. Then in additional 4 hours internal temperatures drop from 70 degrees F. to 45 degrees F. or below. Operator indicated that he would immediately implement a cooling log to record internal food temperatures during the cooling cycle. All food temperatures as taken with DOH thermapen were in the acceptable range. |

The mechanical dishwasher is still out of service and a proper three bay dishwashing area was set up. Sanitizing concentrations,in the third bay, were in the acceptable range. Cut and improperly capped electrical wires were observed extending out of main electrical box. |
