Comments: The manual process of washing, rinsing and sanitizing food service items was reviewed with onsite staff and was acceptable. Sanitizing levels were measured for wiping rag solution and the sanitizing bay of the manual dishwashing process and were acceptable.

Comments: Education was given on proper cooling techniques. Educational materials on proper cooling procedures along with a blank cooling log were given to operator. It is recommended that a cooling log be used to monitoring the cooling process to ensure that internal food temperatures drop from 120 degrees F. to 70 degrees F. in 2 hours. Then in additional 4 hours internal temperatures drop from 70 degrees F. to 45 degrees F. or below. Operator indicated that he would immediately implement a cooling log to record internal food temperatures during the cooling cycle. All food temperatures as taken with DOH thermapen were in the acceptable range.

Comments: Education was given on the importance of having long handled serving utensils for ice cream toppings. This reduces the instances of cross contamination and bare hand contact with these food items. Education was also given on proper cold holding procedures and making sure that food items being stored do not protrude over the edge of the food grade container being used. The mechanical dishwasher is still out of service and a proper three bay dishwashing area was set up. Sanitizing concentrations,in the third bay, were in the acceptable range. Cut and improperly capped electrical wires were observed extending out of main electrical box.

Comments: Manual dishwashing processes were observed being carried out correctly. The mechanical dishwasher is still out of service. The operator told the inspector that they have not been able to get it properly serviced yet. Numerous electrical wires were observed cut and not properly capped. Additionally, outlet plate covers were observed missing from outlets in the ice cream parlor area.
