Comments: Pork chops - 176 °F, Potato - 180 °F, Broccoli - 180 °F milk - 36 °F. MWF meals are made here on site, Tues and Thursday the protein gets delivered. A new commercial dishwasher was installed, the specifications for the unit is 150 °F wash and 180 °F rinse sanitize.

Comments: Chicken salad, cantalope (washed prior to slicing), Tomato cucumber salad was prepared the day of inspection. Chicken salad was 47 °F and made with prechilled ingredients. Thermometers were calibrated on site and found to be accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection.

Comments: Meals are prepared on site Monday, Wednesday, Friday. Meals are delivered Tuesday and Thursday. The meal served today was as follows: pasta-cook and serve, salad prepared and served, meat sauce( with fresh ground beef)- 168 °F, milk - 38 °F. Thermometers were found to be accurate. Three bay dishwashing was discussed. An employee sick foodworker policy was discussed. New flooring has been installed per approved submission. All cold and hot holding temperatures were found to be acceptable. The menu was reviewed at the time of inspection.

Comments: Dishwashing procedures were reviewed and found to be acceptable. Specifications sheet for new flooring material was accepted at the time of inspection. Commercial rollout linoleum was proposed and is acceptable. Potential issues with damage to sections of flooring well as installation of baseboard or cove base was discussed.

Comments: All violations written on the last inspection were corrected except making the bathroom door being self-closing, which is in progress and should be completed within the next week or two. A new mechanical dishwasher was installed: GE Model: GSC3500D45BB. During the inspection it was unclear if the dishwasher reaches temperatures that properly sanitize the items it washes. If the dishwasher unit does reach sanitizing temperatures please provide documentation of these specifications for this model to our office. If it does not reach sanitizing temperatures, the facility needs to implement a separate sanitizing step, followed by air drying of the dishes, following being run through the dishwasher.

Comments: The food service worker is using dish soap to wash her hands. Hand wash soap should be used. The facility is planning to install a new dishwasher. Please contact DOH with specifications for the dishwasher prior to purchase and installation. Temperature logs for meals on wheel were not available for review. Per interview, Temperatures are measured weekly and recorded on the log which is sent to the Central Office. Please ensure that copies of logs are on-site so they can be reviewed by DoH staff during inspections.
