Home fries, chili and bacon are cooked in advance and cooled. summer events include Labor Day and 4th of July bbq with hot dogs and hamburgers and cold salads. hot and cold holding procedures were discussed. Thermometers were all calibrated. A digital thermometer is recommended to be purchased to be used along with the analog. A food service information packet was given at the time of inspection with cooking temperatures reviewed. The menu was reviewed and avoiding bare hand contact and cooking temps were discussed. Eggs, home fries, pancakes and waffles are all cook to order where batter in the winter is not made in advance. In the summer when it is busy, hot holding of home fries and cold holding of reconstituted waffle and pancake mix was discussed. |
