Comments: During reinspection, a number of violations were observed to have been corrected since the time of the June 7, 2018 inspection. These include item: 2B PHH food workers preparing raw food - violation was corrected by using yellow-handled tongs to handle raw meet products (frozen hamburger patties) and silver tongues for handling cooked products; 8A single serve cups used to scoop and serve ice cream toppings - violation was corrected by the use of long-handled two ounce scoops; 11D dirty ice machine - violation was corrected by cleaning ice machine; 12B sewage disposal, dumping mop water in 3-bay sink - violation was corrected by dumping mop bucket in staff toilet until such time as utility sink can be installed; 15A dirty surfaces under soda syrup rack in basement - floor was cleaned. Food preparation by cooks was observed for a period of 30 minutes. No PHH violations were observed during that period of time.

Comments: Discussed with operator hot holding and cold holding procedures. Measured temperatures include cold holding sliced tomatoes at 42 degrees, hot held Michigan sauce at 165 degrees and cooked hamburger at 181 degrees. Operator installed outdoor walk in freezer without DOH approval. The ice machine drain, the ice cream water cooling discharge drain and the basement sink drain (sink used for making root beer; ice and water is in sink) all drain to a sump pump in the basement and the water is discharged outside on the lawn. We will speak with our office engineers to determine if this is acceptable and let you know if changes will need to be made.
