Comments: Walk in cooler temperature on thermometer reads 38 °F. Inspector's thermometer measures ambient temperature inside the unit at 43°F. Food product temperatures in the walk in cooler are measured at 41 °F. All food products measured at the service counter were found to be 37°F-45°F. The counter temperatures were measured at the bottom of the cooler and are 33 °F on the vegetable side and 43 °F on the meat side. All items have plastic lids and the hydraulic lid was in use once customers had left counter. Ice is not currently used to maintain temperatures. The operator has supplied alternative AC unit in the kitchen area with open duct aimed at front room above the counter and also duct aimed at back of facility. Duct work for exhaust leads to back window. AC unit is set for temperature of 70°F and the display reads an indoor temperature of 84 F. Indoor temperature is consistent with inspector's thermometer. Manager states that the ventilation hood above the oven has been repaired and that they are waiting on repair and or replacement of roof top air conditioning unit. Note have to place AC unit in the rare of the facility if not able to use roof.

Air temperature was found to be 84F at time of inspection. The store manager was instructed to contact the NYS DOH Oneonta office for further instructions regarding the opening of the store.

Comments: The following food items were measured with the corresponding temperatures (in degrees F): Meat cooler: Tuna salad at 3:58PM - 45; Bar-b-que Chicken - 43; Chicken strips - 35; Walk-in cooler: Tuna salad - 38; Turkey strips - 34. Condiment cooler: Sliced tomatoes - 44. Temperatures are 45 degrees or less for the potentially hazardous items measured. The two line units appear to be working as designed in that they are keeping the food items cool without the use of ice. The walk-in cooler temperature measured between 36 and 38 degrees F, but ice was present in three 5 gallon pails in the cooler. Cleaning was performed by the refrigeration repair person who said that the condensers were very dirty. The air conditioning is still not working properly in the store.
