Food workers in the middle of prepping trays of cooked baked ziti (just removed from oven), by cutting into portion sizes, wrapping trays with aluminum foil and placing in warming boxes to hot-hold until served for lunch (lunch service to begin within ten to fifteen minutes). Baked ziti measured to be 175F. Roasted sweet potatoes, also for lunch, holding at 155F, vegetable soup 200+F. The following foods, to be served for dinner, were under preparation for hot-holding: kishka 180+F, potato kugel (still baking in ovens), salmon (between 40 and 50 F - under active preparation by workers to be placed directly into oven for cooking), chulen (180+F - hot held on stove top). // Proper product thermometers readily available and used by cook.
