Baked ziti measured to be 175F. Roasted sweet potatoes, also for lunch, holding at 155F, vegetable soup 200+F. The following foods, to be served for dinner, were under preparation for hot-holding: kishka 180+F, potato kugel (still baking in ovens), salmon (between 40 and 50 F - under active preparation by workers to be placed directly into oven for cooking), chulen (180+F - hot held on stove top). // Proper product thermometers readily available and used by cook. |
