Meat sauce observed to be reheating in oven (from refrigerator) to a minimum of 165 (cook stated that it will be reheated to boiling). Rice, hot-holding oven for lunch, measured to be 165F, rice hot-holding on stove measured to be 170F. All other foods on stove still in the process of cooking. Observed dishwashing method (manual dishwashing in kitchen for kitchenware, mechanical dishwasher used for all dining ware). Sanitizing solution (in kitchen) properly maintained. Discussed test strip requirements.
