Comments: Cook was not available at the time of inspection, but appeared to have just departed, as recently cooked foods were observed to be cooling on the counter (some still above 140F, please see 5C for food held out of temperature). Large pot (approximately 15 pounds) of favel (cooked grain) and large pan (approximately 10 gallons) of cutlent (bean stew) observed to be cooling on counter, with internal temperatures of 150+F and 160+F. Discussed with operator that both food containers will be broken down into smaller containers once their internal temperatures drop to 140F, at which point they will be placed into the walk-in cooler. Observed food worker divide both food products into smaller containers (less than four inches deep each) at time of inspection. // Water system: chlorine residual measured to be a slight trace from Shul hand-wash sink, but 0.0 ppm from facility kitchen, unit 4 and unit 12. Mr. Fisher stated that he measured a residual of 0.2 ppm this morning from the Shul hand-wash sink, but the daily operation records were not available for inspection. Facility still on boil water order, and boil water order notice posted in kitchen only (from previous inspection). Discussed with operator that he make copies of this notice to post in public locations throughout the facility.

Per Reba, item finished cooking at 8am this morning and was placed in walk-in cooler once the temperature dropped to 140 degrees Fahrenheit (uncovered) - ok. Note: cooks generally begin preparing lunch at 1:15 pm. Water system chlorine residual measured to be 0.7 mg/L - ok.
