Possibly mor refrigeration space is necessary. other food in walk in was 44 f. 126 inside seats counted and 100 outside seats counted. Demonstrated calibration with my therm at 32 f. Comments: Observed staff cutting mushrooms with bare hands at entry to kitchen. Staff then placed gloves on to complete task with out any direction or comment from inspector. Owner and manager stated mushrooms only used for sautéed line. Discussed recommend use of gloves for items that could be used raw.Management must require gloves or proper utensils for any items served uncooked or lightly cooked. Satisfactory thermometers, sanitizer and hand wash facilities observed. Will schedule HACCP review.
