Meatballs have internal temp of 80 degrees F and must not be covered or stacked. Meatballs to be rapidly cooled in walk in to reach 70 f. in additional hour(DO NOT BAG Or COver FOOD UNTIL IT REACHES 45 f DURING COOLING-unless procedure has been confirmed to comply with NYS sanitary code.
