Item 11A: Manual facilities inadequate, technique incorrect; mechanical facilities not operated in accordance with manufacturer's instructions Comments: This operation is operated Friday evenings during the summer only for a rodeo. The menu is Rodeo cheeseburgers cooked on large commercial outside grills with cooked onions, pre packaged cotton candy, flavored ice, bottle drinks and packaged candy. They have the operation down to a science utilizing numerous staff. Four grills, four thermocouple stem probe thermometers, burgers cooked to a minimum of 160 degree F, onions are cooked at the Bible Institute kitchen and transported to the Ranch camp site in clean covered food safe tubs. Extra sets of utensils are brought down in clean tubs to rotate out then all ware washing of utensils and tubs is done in the large Bible Institute mechanical dishwasher. The cheeses slices are stored in the stand's upright cooler to pull from throughout the evening, then any remaining brought back to the main kitchen. Everything is transported in a covered truck, and is a five minute trip. Sanitizer pails are prepared and set out at every station. |
