Although the temperature of the pulled pork was reduced from 120F to 70 F within two hours, the cooling method currently being used in not an approved method. Operator must cool pork in a shallow pan (no more than four inches in depth) and should leave the product uncovered during the cooling process. Once the pulled pork is cooled from 120-70 F within two hours and then from 70 F to 45 F within another four hours, it can then be put into the crock pot for storage at 45 F or less. |
