Comments: Comments only: 1. Using a metal stem probe thermometer, food temperatures inside the 3 door sandwich cooler ranged from 43 to 46 degrees F. Strongly recommend having this cooler serviced to ensure food temperatures consistently remain under 45F. 2. Two large cooked hams located in cooler were temped at 38F. These hams were well over 6lbs each. In discussion with staff, these hams were cooked on Easter Sunday, and were "cooled" by letting them sit out at room temperature for a while, then wrapped in plastic wrap and placed inside the cooler. Provided proper cooling education. 3. Soap dispenser is mounted above right bay of 2 bay food prep sink. Discussed with Hank. Must either move soap dispenser or label left bay of sink "For Food Prep Only." This is to avoid potential cross contamination of the soap dripping onto food. All violations must be corrected and are subject to enforcement action if not addressed in a timely manner.
